It’s rhubarb season!! This is one of my favourite ways to use all the rhubarb in my garden. It’s easy and everyone loves it.
Crust:
1 cup flour
5 tbsp icing sugar
1/2 cup margarine
pinch of salt
Mix like pie crust, pat into 9 x 11 inch pan. Bake for 8 minutes at 350 degrees. Cool slightly.
Topping:
3 cups chopped rhubarb
2 eggs
1/4 cup flour
3/4 cup white sugar
3/4 cup brown sugar
1/2 tsp baking powder
Mix ingredients together. Spread on to slightly cooled crust. Bake for 30 to 40 minutes at 350 degrees.
Serve this warm or cool and it’s even better with a scoop of ice cream or frozen yogurt.
